All-Clad Stainless Roti Pan (Kitchen)

One Review for This Product
After finishing the best turkey I have ever made for Thanksgiving, I cannot highly recommend this pan! An investment for sure, I was lucky enough to receive it as a gift. At first I was hesitent about cooking on stainless steel. My Mom has a set of some cheepy brand of stainless steel that she got in 1971 as a wedding gift (still has them) and they are a pain to cook on, everything sticks. Not in these pans! The majority of the time they wash right up. Sometimes you might have to use a little Barkeepers Friend on them to keep them sparkling, but it takes two seconds to clean with that. When we got married I had started with Calphalon. I am definately switching to All Clad!!! Much more simpler.

  1. At first we loved this pan. We've used it quite a bit, but recently it has started to warp and it gets worse when it is heated. I can no longer sear a roast and then put it in the oven because the pan is so uneven. I've contacted All Clad and am waiting to see what they say. Needless to say, I would have been much happier with a less expensive pan. I am very happy with all the other All Clad pans that we have, but this one is a disappointment.

  2. I have this pan and the box says solid Stainless Steel. So, be aware that you aren't getting a aluminium. I think dealers don't realize that not all All-Clad products are aluminium. It's a nice pan anyways.

Very sturdy, good quality, a little big but that will help when cooking a turkey or a lot of side dish. I was thinking to return it for the smaller one, but then I realized that the difference between the two sizes pans is not that big.
It has the typical high quality and sharp look like all All Clad items. It says on the box - made in China, I don't know if the product or the box is made in China, since it comes with all quality certificates and guarantees by All-Clad and doesn't look like a product from China :)

I stepped up from the black, speckled roasting pans you get at the grocery store. I've had my All Clad pan for a year and purchased it before Cook's Illustrated latest review.

I made my best turkey ever. I had to give up my family's traditional overnight roasting recipe, but I think this is better. Crisp skin and I can make gravy in the pan.

I've used this pan once and my only problem was that I noticed my drippings were burning, so I added a scant amount of water to the pan. This year, I'll lower the oven temperature slightly.

It's a good, heavy pan. When you pull this out of the oven, you feel like you've done something! Easier to clean than my supermarket version.

With only one use, I haven't observed any of the warping mentioned in other reviews. I will update my review if warping occurs.

  5. This is a great roasting pan and is heavy and solid in the way all All Clad pans are. But it is huge. If you frequently roast 20 lb turkeys or half an ox, this pan is for you. A regular roasting chicken looks pretty small and forlorn. It is a terrifically well-made roaster, but I find I also need one just a bit smaller.

  6. This roasting pan has become a stable workhorse in my hanging rack. Fit for turkeys, crown roast, standing rib roast, a mess of hens and quail, 8 leg/thigh quarters, and ducks, this pan really can be used for anything in the oven.It is large! Make sure it fits your oven and your oven can work properly around it. It's also heavy and when filled is VERY heavy. When removing, make sure you have on good oven mitts (or the heat and weight will just sear through the glove), and you have good arm strength to pull your filled roaster out (no joke). No one likes hot and heavy surprises. The pan can keep a good luster, even after much use. I've never had anything stick horribly to it, though it's not non-stick, specifically. Immediately send to sink with water, rinse, scrape if you need, and the pan is ready to go again. Also, the handles point upwards, above the level of the roaster. Be aware. Makes a difference if you have a small oven (again).I don't know what I did before this roaster (well, I know what I did and I can't believe I functioned). It has helped in major ways with large dishes, cooking evenly, cooking on time, heating and cooling well, and with improved quality of my meals. If you're fortunate enough to get the large roaster from All-Clad, do so.

  7. This is the biggest of the All clad roasting pans. It fits a 25/30 lb turkey no problem. The nice thing about having a regular interior vs non stick is that its easier to make gravey in this pan. (The recipe I use needs the flour to stick a brown a bit and be scraped off by my fork.) Also with a good soak everything came right off.You can also roast two ducks in this pan. (It's big enough.)If I had "some extra money" I'd be tempted to get the French roasting pan to get the lid, but that pan is slightly smaller. Or you might look into the deal which has a rack already in it and the set of oven mitts.(Be sure to measure the inside of your oven before choosing one of these pans. Some ovens aren't big enough.)
